Is the friendly fellow on the flag of Schleitheim supposed to be an aurochs, or urus, like the one
on the flag of Uri? Or does she acknowledge the local dairy industry?
Does anyone know, at this late date?

It's an ox, not an aurochs (German: Auerochse (Ur)).
We know this because the emblem is derived from the arms of Ludwig Ochs, the reeve from 1559–69.
