The protesters seem to be using the standard Egyptian flag, but often with
the addition of Arabic text on the center stripe. (In some cases this may
replace the eagle.) I can't make it out, but some seem printed (in green) and
include numbers.

These could be references to Jan. 25th, the day the anti-Mubarak protests
began? I understand from the news that the date has taken on a great symbolic
meaning already.

This is date when the uprising started, in January. There also used many other
flags with protest or support slogans.
