The municipality was established in 1978 by a merger of Herbstadt proper, Breitensee and Ottelmannshausen. The black cross is taken from the arms of the Imperial Abbey of Fulda, which acquired large estates in Herbstadt in 800. Breitensee had been a fiefdom of the abbey. The sinister half displays the arms of the Echter of Mespelbrunn family. Valentin Echter of Mespelbrunn founded the parish of Breitensee. The foundation was confirmed in 1598 by Bishop Julius Echter of Mespelbrunn (1573 - 1617). The same year the parish church dedicated to St. Michael was finished, famous for the completeness of its unique interior. The inescutcheon displays the arms of the Lords of Herbilstadt, local rulers between 1284 and 1608. The tinctures golden and black are those of the Counts of Henneberg, whose influence is proven in all former municipalities in the 13th century.
